Yeah, I hear ya. I wanted to like Morrowind and Oblivion, but they never really clicked with me either. Skyrim has addressed a couple of my bigger criticisms with the previous two.

It keeps the open-world, do-whatever-you-want-whenever-you-want style, but provides better direction for quests and following the main storyline.

They also revamped the skill list, and made it a hybrid of talent trees and the classic skills. You still skill up through use, but can then spend points in each skill's tree which provides you with increased skill effects, or brand new abilities. It's a lot more interesting.

Finally, I hate the first-person perspective for RPGs, and you could never zoom very far out in Morrowind/Oblivion. Skyrim lets you zoom out a good bit, which makes for a much more enjoyable 3rd person view.
